THE WHISKY

This single malt was distilled in the heart of Speyside. It began life as a peated spirit which was matured in ex-bourbon wood for 13 years. We re-racked this into an sumptuous first fill Pedro Ximenez sherry quarter cask and finished the maturation in style. One year on, we are amazed by the transformation in the whisky. The smoke which was centre stage is now playing a background role whilst chocolate has become star of the show. It leaps out of every glass!
This is being bottled next week (early February 2024) and will be ready for posting or collection later this month.

The quarter cask is predicted to yield around 160 bottles at natural cask strength. As always, un-chill filtered and natural colour.

THE STORY

In late 2022, we bought a handful of casks from Speyside. They had been distilled at one of the super stars distilleries of Speyside but we weren’t allowed to name the spirit on subsequent labelling. Frustrating but not uncommon. What made the spirit unusual was that it was peated. The peat that had been used was Speyside peat, most likely dug up near Foggiemoss. This imparts a completely different flavour profile to whisky compared to Islay peats. We bottled some of the spirit in March of 2023 as Smokestack Lightning but we also filled two first fill sherry quarter casks with the same spirit. The first was Oloroso sherry and was bottled in Autumn of 2023. Now this is the final iteration… the Pedro Ximenez sherry quarter cask.

The initially strong peat has transformed into something much more delicate and subtle. It’s a completely unrecognisable dram.

WHAT’S IN A NAME?

Given the drastic transformation that this single malt has undergone during it’s time in first fill sherry, we wanted to name it on that theme. We put it to a poll in the Friends of Uncharted Facebook group. Dana and I had thought about calling it Changes after the Bowie or Black Sabbath songs, or maybe Transformer after the great Lou Reed album, but the people have spoken and The Devil In Disguise was the overwhelming favourite. Elvis has still got it apparently!

Long and relaxed smoke, buttery toffee and proper Scottish clootie dumpling
