Cast your mind back to last year, if you were following Uncharted Whisky, you might have seen a release ‘The New Kid In Town’ – Speyside sherry bomb. By the time you may have looked again it was gone- sold out in a matter of days. Well, there is another… Do It Again, is the aptly named sister cask, given another year soaking in the first fill sherry quarter cask.
Now aged 8 years old, this decadently rich single cask has benefitted from the rather generous finishing period of 24 months in Oloroso sherry quarter cask, having been originally matured in ex-bourbon wood. The resulting spirit is sweet, dripping in aromas of dates, Christmas cake, spices and all the classic sherry cask flavours we love. It is an abundantly generous dram, viscous and thick when tasted with a long, smooth and spiced finish.
This whisky has been bottled at natural cask strength of 55.1% ABV, hand bottled, hand labelled and presented to you un-chill filtered and at a complete natural (and rather fantastic) colour. Only 137 bottles yielded from the cask.

WHICH DISTILLERY?
The Speyside Distillery is beautiful and picturesque distillery nestled in the hills near Kingussie. The bottle their fantastic spirit under the brand SPEY. A famously aromatic, floral and barley rich spirit which they pair with a range of different cask finishes. The distillery in it’s current form is very young, having only been established in 1990 but has consistently produced excellent whisky since. However, the rumour around the campfire is that Speyside distillery is set to close with distillation moving to a new location, retiring the old stills. This may condemn this fantastic spirit to history.

TASTING NOTES
Nose
Really pronounced and rich sweetness leaps out the glass. All the classic aromas of a sherry monster dram! Raisins, dark chocolate and sticky toffee pudding. A touch of vanilla and a hint of leather.
Palate
Bold and unctuous. Cask strength and residual sugars make for a mouth-coating dram. Buttery honey, sticky toffee join waves of Christmas cake, sticky toffee pudding and melted vanilla ice cream.
Finish
Long, mellow and super smooth. The fudgey sweetness lasts so long mingling with mild spicing.
