This barrel had a bite when we first received it having been filled at the weighty but classic cask-filling strength of 63.5%. However,  now four years old, it is beginning to mellow out and develop some serious sweetness. The spirit began life sharply vibrant, malty, and aromatic in it’s own ferocious way. The maturation was started in the classic style, using a refill ex-bourbon barrel to begin to soften the maltiness and build the canvas of a classic highland whisky profile- rich body, strong aromatics and sweet oaky vanilla flavours. Then Uncharted got it and decided to do something a little more off the grid.

We took a brand new first-fill ex-Sauternes cask, fresh from the best cooperage we know, disgorged the sacrificial wine (wine left in the cask to keep it in top quality condition while it finds it’s way to Scottish shores) and re-filled it to the brim with this gorgeous Highland single malt spirit. Sauternes is a super premium dessert wine from Bordeaux- it is light gold in colour and typically adds peach, floral and lychee flavours to whisky.

We expect the maturation of this fragrant spirit in Sauternes cask to produce a beautifully mellow, well-rounded, and sweet, floral whisky. 

With bottling scheduled at 8 years old in 2028, this cask will have matured 2 years in ex-bourbon wood and 6 years in ex-Sauternes wood. A pretty unusual “finishing period”, some would say Uncharted…

Samples

Once a year, we offer to draw a sample from the cask and post it out to anyone who wants to experience the cask’s maturation progress first hand.

They need to be ordered separately from the cask share itself and only a limited number is available each year.

FAQ's

Cask shares split single cask whisky into smaller and more affordable chunks. Rather than having to shell out thousands for a full cask, cask shares allow multiple people to buy part shares in the same cask reducing the cost while giving you access to all the benefits of cask ownership. We call this a “Syndicate” bottling.

Every cask of whisky  is unique and as such, yields a different number of bottles. These are divided into shares which are for sale through our website. When you purchase your whisky cask share we issue you with a certificate of ownership of your share for the cask purchased. 

The Uncharted Whisky Co. then takes care of everything for you from the storage to the bottling once the cask is of age and the tax payments. We also provide you with yearly updates on your cask’s maturation progress,  tasting notes, strength and colouring. Once per year, you can order a sample of the cask to do your own tasting. 

 

  • You select which of our casks you would like a share in
  • Purchase your share on our website
  • You will receive a digital receipt and Certificate of Ownership
  • When the cask is ready, we will bottle the cask under the Uncharted Whisky Company’s “Private Cask” label and ship your bottles to you. Delivery is free to mainland UK.
  • We offer yearly updates on the cask’s maturation progress, Angel’s share, tasting notes, strength and colouring including photography. At this point, you can order a sample of the cask to do your own tasting.
  • Shares start at as little as three bottles which make it an ideal gift for the whisky lover in your life (which may well be yourself!)

All Scotch Whisky must be stored and bottled in Scotland in an approved warehouse. Each cask has a planned bottling date. You can see this before you buy shares in your chosen cask and on your Certificate of Ownership. Once bottled, it will then take a few weeks for us to deliver to you.
